Specifically, I picked up a gallon of Olympic Flat Latex from Lowes, just thinking I could use it as a trim. After mixing it up it just looked really watery and didn't really act like paint. You don't want to use flat for trim anyway. It will pick up every fingerprint and be hard to clean. Take it back, if you barely used it, ask for an eggshell or semi-gloss, and most likely it's best to get a colour mixed. Without seeing the can we don't know whether it came fully tinted for use or is a base for tinting. Most latex is sold as a base, since there are 50 colours you could reasonably call 'white'. I would take it back to Lowes and have them look at it. I could be a bad can of paint, or it might need more mixing which the can do on a machine.
